This spring, THE IVY CARDIFF steps out of winter and into a season of renewal, as its restaurant and terrace blossom into The Ivy’s Secret Garden.
Inspired by the uplifting energy that comes with the first signs of spring – longer days, brighter mornings and the return of colour – The Ivy’s new seasonal menus are designed to awaken the senses: the sounds of clinking glasses on sun-dappled terraces, the scent of fresh herbs and citrus in the air, the taste of vibrant, produce-led dishes, and the simple pleasure of gathering once more.
Now running across all menus at The Ivy Cardiff, from the all-day á la carte to the two-course £19.17 menu will be refreshed for the season, championing fresh flavours and lighter touches. What’s more, guests will also be able to enjoy a curated selection of the new spring dishes in a set menu format with the Taste of Spring menu, at £27.95 for two courses or £32.95 for three.

When it comes to the celebration of spring flavours, the new seasonal á la carte is bursting with new dishes to awaken the senses and bring The Ivy’s Secret Garden to life.
To start, guests can start with the Whiskey Barrel Wood Smoked Salmon, revealed at the table for a moment of theatre and served with chive cream cheese, salmon roe, lemon and dark rye bread.
Roast Queen Scallops arrive alongside crisp potato rösti, truffled crushed peas, spinach and a light Parmesan emulsion – delicate yet deeply satisfying.
Plant-based diners will delight in the vibrant Spicy Jackfruit and Roasted Peanut Bang Bang Salad with chayote, sesame and white mooli, while the Crab and Avocado Tian offers a refreshing medley of dressed crab, avocado, radish and coriander.
Vibrant spring flavours abound with the hand-pulled Buffalo Burrata with Pesto, accompanied by a red pepper tapenade, black olives and baby plum tomatoes and topped with sourdough croutons, sherry vinaigrette and Thai basil.

For the main event, the menu travels from the fragrant warmth of a Monkfish and Prawn Keralan Curry to the umami-rich Teriyaki Salmon with Tenderstem Broccoli, lifted with yuzu mayonnaise and citrus-pickled fennel. Oven-baked Sea Bream with Gigantes beans in rustic tomato sauce celebrates Mediterranean simplicity, while the indulgent Lobster and Truffle Risotto brings a touch of luxury to the season.
Spring’s green abundance shines in the Asparagus, Courgette and Broad Bean Linguine in a delicate plant-based white wine sauce, and in the comforting Sweet Potato and Spinach Curry fragrant with lemongrass and coconut.
For those seeking timeless favourites, Half Roast Chicken with asparagus and white wine velouté, premium aged Sirloin and Centre-cut Fillet Steaks, and The Ivy Burger – complete with optional West Country Cheddar or dry-cured bacon – offer signature Ivy decadence.
Sides of dressed green beans, baby gem lettuce with herbs and pine nuts, and tomato and coriander salad bring freshness and colour to the table.
Desserts provide a final flourish. The Black Bee Honey and White Chocolate Cheesecake, served with mango sorbet, honeycomb and edible flowers, captures the golden sweetness of spring.
Meanwhile, the nostalgic Rhubarb and Raspberry Knickerbocker Glory layers tart rhubarb and raspberry with vanilla ice cream and berry compote – a joyful celebration of Britain’s most beloved seasonal fruit.

Mark Askew, Group Executive Chef at The Ivy Collection, told us…..
“Spring is such an energising time in our kitchens. As the days grow longer and the first seasonal produce begins to shine, there’s a real sense of optimism that naturally finds its way onto the plate. For our new spring menus at The Ivy Collection, we wanted to celebrate that feeling – lightness, colour and vibrancy – while still delivering the depth of flavour and theatre our guests expect from us.
From beautifully fresh seafood and bright, herb-led dishes to indulgent touches like truffle and honey, each plate is designed to reflect the sounds, scents and tastes of the season. It’s about creating dishes that feel uplifting and joyful – perfect for enjoying in our gardens and terraces as everything around us comes back into bloom.”
Whether enjoying brunch in a blossom-framed dining room, cocktails on a sunlit terrace, or dinner in one of The Ivy’s elegant garden spaces, guests are invited to embrace the tastes, scents and atmosphere of spring.
