Forest-Inspired Dining at Celtic Manor This Autumn

This autumn, The Celtic Manor Resort invites guests to step into the wilderness with WILD at Rafters, a limited-time dining experience where nature takes centre stage in both flavour and setting.

Taking place from Tuesday 30th September to Saturday 11th October (excluding Thursday 2nd October), WILD at Rafters brings the untamed beauty of the great outdoors into one of South Wales’ most striking dining rooms, set high above the fairways of the Twenty Ten golf course. With interiors featuring raw woods, natural textures and views across rolling parkland, the stage is set for a menu that celebrates the essence of nature.

Curated by Executive Head Chef Michael Bates, the menu shines a light on seasonal, locally sourced ingredients, elevated with bold and imaginative flavours. Dishes are inspired by the forest, the land and the sea, delivering a culinary journey that is as adventurous as it is indulgent.

Highlights include:

  • Dry-aged Welsh venison with elderberry and smoked beetroot
  • Wild mushroom pithivier with truffle and hazelnut
  • Line-caught sea bass with foraged sea herbs
  • Decadent desserts infused with woodland fruits and botanicals

We can also explore an expertly crafted wine and cocktail list, designed to pair with the earthy, vibrant flavours of the menu.
